- Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk the melted, slightly cooled butter with the brown sugar and granulated sugar until smooth.
- Whisk in the pumpkin purée, egg yolk, and vanilla extract until evenly combined.
- In a separate bowl, combine the flour, baking soda, salt, cinnamon, and pumpkin pie spice.
- Add the dry ingredients to the pumpkin mixture and stir just until no dry streaks remain.
- Fold in the semisweet chocolate chips.
- Cover and chill the dough for 30–60 minutes.
- Scoop approximately 1 1/2 tablespoons of dough per cookie onto prepared baking sheets, leaving about 2 inches between portions.
- Bake for 10–12 minutes, until the edges are set and the centers still look slightly soft.
- Cool the cookies on the baking sheet for about 10 minutes, then transfer them to a rack.
Notes
Use plain canned pumpkin purée, not pumpkin pie filling. If the purée is watery, blot or lightly press it with paper towels before measuring. Do not overbake; the centers continue setting on the hot baking sheet.
