These soft peanut butter chocolate chip cookies have tender centers, lightly golden edges, and plenty of semisweet chocolate in every bite. Chilling the dough helps create a thick, chewy texture and limits spreading.

Cookie Dough
  • 1/2 cup (113 g) Unsalted butter, softened
  • 3/4 cup (about 190 g) Creamy peanut butter
  • 3/4 cup (150 g) Granulated sugar
  • 1/2 cup (100 g) Packed light brown sugar
  • 1 large Large egg, room temperature
  • 1 teaspoon Vanilla extract
Dry Ingredients
  • 1 1/4 cups (156–160 g) All-purpose flour
  • 3/4 teaspoon Baking soda
  • 1/2 teaspoon Fine salt
Mix-Ins
  • 1 cup (170 g) Semisweet chocolate chips

Method
 

Step-by-Step
  1. Whisk the flour, baking soda, and fine salt together in a medium bowl.
  2. Beat the softened butter, peanut butter, granulated sugar, and brown sugar until smooth and creamy. Beat in the egg and vanilla extract.
  3. Add the dry ingredients to the wet mixture and mix just until no dry flour remains. Fold in the semisweet chocolate chips.
  4. Cover the dough and chill it for 30–60 minutes, with about 1 hour preferred, until firm enough to scoop.
  5. Heat the oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop approximately 1 1/2 tablespoons of dough per cookie and arrange the portions about 2 inches apart.
  6. Bake for 10–12 minutes, until the edges are set and lightly browned while the centers still look slightly soft. Cool the cookies on the baking sheet for about 5 minutes, then transfer them to a rack.

Notes

Do not overbake; the centers should look slightly underdone when the cookies leave the oven. Measure flour by weight or spoon it into a measuring cup and level it. Regular creamy peanut butter gives the most consistent soft texture, while natural peanut butter may cause spreading or separation.
