Smoky Onion Kale Dip

Ingredients
  

Vegetables and Aromatics
  • 4 cups Fresh kale, stems removed and finely chopped
  • 1 medium Yellow onion, thinly sliced or diced
  • 2 cloves Garlic, minced
  • 1-2 tablespoons Olive oil or butter
Creamy Base
  • 8 ounces Cream cheese, softened
  • 1/2 cup Sour cream or mayonnaise
Cheese and Seasoning
  • 1 cup Shredded smoked Gouda, cheddar, or mozzarella
  • 1/4-1/2 cup Grated Parmesan
  • 1/2-1 teaspoon Smoked paprika
  • to taste Kosher salt and black pepper
Optional Flavor Additions
  • optional Red-pepper flakes, lemon juice, or Worcestershire sauce

Method
 

Step-by-Step
  1. Remove the thick stems from the kale and finely chop the leaves. Thinly slice or dice the onion, mince the garlic, and soften the cream cheese so it blends smoothly.
  2. Heat the olive oil or butter in a skillet over medium-low heat. Add the onion and cook slowly for 10 to 20 minutes, stirring occasionally, until soft and lightly caramelized.
  3. Add the minced garlic and cook briefly, about 30 to 60 seconds, just until fragrant. Stir in the chopped kale and cook for 3 to 5 minutes, until wilted and tender.
  4. Let the kale mixture cool slightly, then squeeze out excess moisture. This step helps keep the finished dip thick and allows the top to brown properly.
  5. In a large bowl, mix the softened cream cheese, sour cream or mayonnaise, smoked cheese, Parmesan, smoked paprika, salt, and black pepper. Fold in the cooked kale, onion, and garlic, adding any optional red-pepper flakes, lemon juice, or Worcestershire sauce.
  6. Transfer the mixture to a baking dish and smooth the surface. Sprinkle a little additional shredded cheese or Parmesan over the top if desired.
  7. Bake at 350 to 375°F for 20 to 25 minutes, until the dip is hot, bubbling, and lightly golden on top. Rest for a few minutes before serving with crackers, toasted bread, pita, or vegetables.

Notes

Cook the onion slowly for the best sweet, savory flavor, and squeeze excess water from the cooked kale so the dip stays thick. Refrigerate leftovers in a covered container and reheat gently until hot.
