  1. Trim excess fat from the chicken and pat it dry. Place the chicken in the slow cooker and sprinkle evenly with the taco seasoning.
  2. Pour the salsa over the chicken, then add the drained black beans and corn. Cover and cook on Low for 4-6 hours or High for 2-3 hours, until the thickest piece reaches 165°F/74°C.
  3. Shred the chicken directly in the cooker and stir it into the salsa mixture. Add cheese just before serving, then top with cilantro, avocado, sour cream, or lime if desired.

Notes

Check chicken with an instant-read thermometer rather than relying on time alone. Avoid opening the lid repeatedly, since each opening can add roughly 15-20 minutes to cooking.
