Ingredients

Chicken
  • 4 breasts, about 1½–2 lb total Boneless, skinless chicken breasts
Honey Sesame Sauce
  • ½ cup Honey
  • ½ cup Low-sodium soy sauce
  • ¼ cup Ketchup
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1 tablespoon Toasted sesame oil
  • ½ teaspoon Crushed red-pepper flakes
  • ¼ teaspoon Ground black pepper
Garnish
  • 2 green onions Green onions, thinly sliced
  • 1–2 tablespoons Sesame seeds

Method

Step-by-Step
  1. Place the chicken breasts in the slow-cooker insert. Whisk the honey, low-sodium soy sauce, ketchup, minced garlic, olive oil, toasted sesame oil, crushed red-pepper flakes, and black pepper in a bowl until combined.
  2. Pour the sauce over the chicken, cover the slow cooker, and cook on LOW for 3–4 hours or HIGH for 1½–2 hours. Cook until the chicken is tender and reaches 165°F in the thickest part.
  3. Remove the cooked chicken from the slow cooker and shred or slice it. Return the chicken to the crockpot and toss it with the sauce before serving.
  4. Spoon the chicken and sauce over rice. Finish with sesame seeds and thinly sliced green onions.

Notes

Use low-sodium soy sauce to prevent an overly salty sauce. Check chicken breasts early because slow cookers vary. For thicker sauce, stir together 2 tablespoons cornstarch and 3 tablespoons cold water, add the slurry to the hot sauce after removing the chicken, and cook on HIGH for about 10–15 minutes.
