Slow Cooker Ham and Vegetable Chowder

Ingredients
  

Chowder
  • 16 ounces Frozen mixed vegetables
  • 2 cups Fully cooked ham, cut into cubes
  • 1 Medium onion, chopped
  • 3 cups Peeled potatoes, cut into cubes
  • 3 cups Chicken broth
  • 10 3/4 ounces Condensed cream of celery soup, undiluted
  • 1/4 teaspoon Ground black pepper
Finish
  • 1 cup Half-and-half cream

Method
 

Step-by-Step
  1. Peel and cube the potatoes, chop the onion, and cut the fully cooked ham into bite-sized cubes.
  2. Place the frozen mixed vegetables, cubed ham, chopped onion, potatoes, chicken broth, undiluted condensed cream of celery soup, and ground black pepper in a 3-quart slow cooker. Stir gently until the ingredients are distributed.
  3. Cover and cook on LOW for 5–6 hours, or until the potatoes and vegetables are tender.
  4. Stir in the half-and-half cream. Cover and cook for about 15 minutes longer, until the chowder is heated through, taking care not to let it boil after adding the dairy.

Notes

Cut the potatoes into similarly sized pieces so they cook evenly. Add half-and-half near the end to help prevent separation or curdling. Taste before adding salt because the ham, broth, and condensed soup may already be salty.
