Slow Cooker French Onion Pork Chops

Tender boneless pork chops slow-cooked in a creamy French onion gravy and finished with optional melted mozzarella or Swiss cheese. This easy crockpot meal takes about 5 to 10 minutes to prepare.

  • 4 chops Boneless pork chops, about 6-8 ounces each and 3/4-1 inch thick
Sauce
  • 1 10.5-ounce can Condensed French onion soup
  • 1 10.5-ounce can Condensed cream of chicken soup
  • 1 1-ounce envelope Dry onion soup mix
Topping
  • 1 cup Shredded mozzarella or Swiss cheese, optional

Method
 

Step-by-Step
  1. Lightly grease the slow-cooker insert. Arrange the four boneless pork chops in the bottom, overlapping them slightly only if necessary.
  2. In a bowl, whisk together the condensed French onion soup, condensed cream of chicken soup, and dry onion soup mix until smooth and well combined. Do not add water.
  3. Pour the onion sauce evenly over the pork chops, making sure each chop is covered. Place the lid on the slow cooker.
  4. Cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours. Begin checking the internal temperature near the minimum cooking time, and remove the chops when the center reaches at least 145°F.
  5. If using cheese, sprinkle the shredded mozzarella or Swiss over the pork chops during the final 10 to 15 minutes. Cover again and let the cheese melt.
  6. Let the pork chops rest briefly, then spoon plenty of onion gravy over each serving. Serve immediately with mashed potatoes, rice, noodles, or a vegetable side.

Notes

Use thicker pork chops rather than very thin cutlets because thin chops can dry out during slow cooking. For thicker gravy, transfer the cooking liquid to a saucepan and simmer for a few minutes, or stir in a cornstarch slurry. Refrigerate leftovers promptly and reheat gently with some gravy.
