- Lightly grease the slow-cooker insert. If the chicken breasts are very thick, pound them gently to an even thickness, then season lightly with salt and pepper.
- Place one slice of ham and one slice of Swiss cheese on each chicken breast. Roll each breast around the filling and secure it with toothpicks, or layer the chicken, ham, and cheese directly in the slow cooker.
- Arrange the prepared chicken in the greased slow cooker. Whisk the condensed cream of chicken soup and milk together until smooth, then pour the mixture over the chicken.
- Combine the dry stuffing mix with the melted butter. Sprinkle the mixture evenly over the chicken and sauce.
- Cover and cook for 4 to 6 hours on LOW or 2 to 3 hours on HIGH. Begin checking toward the lower end of the cooking range, and continue until the thickest part of the chicken reaches 165°F (74°C).
- Let the casserole stand for about 5 minutes before serving. Remove every toothpick before eating, then spoon the creamy sauce and stuffing over each portion.
Notes
The ham, Swiss cheese, soup, and stuffing already contain salt, so season lightly. For a less salty dish, use low-sodium soup and stuffing. If the slow-cooker insert is oven-safe, briefly broil the finished casserole uncovered to crisp the stuffing topping.
