Step-by-Step
- Combine the lime juice, 1 tablespoon olive oil, garlic, chili powder, cumin, paprika, oregano, salt, and black pepper in a bowl. Add the sliced chicken, toss thoroughly, cover, and refrigerate for 30 minutes or up to 2 hours.
- Heat a large cast-iron skillet or heavy frying pan over medium-high to high heat until very hot. Add the remaining 1 tablespoon olive oil just before cooking.
- Remove the chicken from the marinade, allowing excess to drip off. Cook the chicken in a single layer, working in batches if necessary, for about 3 to 5 minutes per side until browned and the thickest pieces reach 165°F/74°C.
- Transfer the cooked chicken to a plate. Add the sliced onion and bell peppers to the same skillet and cook for 5 to 7 minutes, stirring occasionally, until lightly charred but still slightly crisp.
- Return the chicken to the skillet and toss it with the vegetables for 1 to 2 minutes. Taste and adjust with additional salt or lime juice if needed.
- Serve immediately in warm tortillas with lime wedges, chopped cilantro, and desired toppings. For a restaurant-style presentation, transfer the hot fajitas to a preheated cast-iron fajita platter or serve directly from the sizzling skillet.
Notes
Thin, evenly sized chicken strips cook quickly and stay tender. Boneless chicken thighs give the juiciest result, while breasts are a lean and popular choice. Keep the citrus marinade to 30 minutes to 2 hours because marinating chicken too long in lime juice can affect its texture. Cook in batches when needed so the chicken and vegetables sear instead of steam.
