Shrimp Pasta in Lemon Cream Sauce

Ingredients
  

Pasta and Shrimp
  • 12 ounces Linguine or fettuccine
  • 1 pound Large shrimp, peeled and deveined; tails optional
Sauce
  • 2 tablespoons Unsalted butter, divided
  • 1 tablespoon Olive oil
  • 4 cloves Garlic, finely minced
  • 1 cup Heavy cream
  • 1 lemon Lemon, finely zested
  • 2 tablespoons Fresh lemon juice, plus more to taste
  • 1/2 cup Finely grated Parmesan cheese
  • 1/2 cup Reserved pasta-cooking water, as needed
Seasoning and Garnish
  • 1 teaspoon Kosher salt for the sauce, plus salt for pasta water
  • 1/2 teaspoon Freshly ground black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1/4 teaspoon Red-pepper flakes, optional

Method
 

Step-by-Step
  1. Bring a large pot of generously salted water to a boil. Cook the linguine or fettuccine until just al dente according to the package directions, reserve 1/2 cup of the cooking water, and drain.
  2. Pat the shrimp dry and season lightly with salt and pepper. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat, then cook the shrimp for approximately 1–2 minutes per side until pink and opaque; transfer them to a plate.
  3. Reduce the skillet heat to medium and add the remaining tablespoon of butter and the minced garlic. Cook for about 30–60 seconds, stirring often, until fragrant but not browned.
  4. Pour in the heavy cream and add the lemon zest, black pepper, and optional red-pepper flakes. Simmer gently for 2–3 minutes so the cream warms and the garlic and citrus aromas infuse the sauce.
  5. Lower the heat and whisk in the finely grated Parmesan. Add a little reserved pasta water, a splash at a time, until the sauce becomes smooth and loose enough to coat the pasta.
  6. Add the drained pasta to the skillet and toss until every strand is coated. Stir in the lemon juice over low heat or after removing the pan from the burner to keep the cream sauce smooth.
  7. Return the shrimp to the skillet and warm everything briefly for about 1 minute. Finish with chopped parsley and adjust with additional Parmesan, black pepper, or lemon juice as desired.

Notes

Reserve pasta water before draining because its starch helps the butter, cream, cheese, and lemon form a smooth sauce that clings to the noodles. Add lemon juice near the end and avoid boiling the cream with the acidic juice. Store leftovers covered in the refrigerator and reheat gently with a small splash of water or cream.
