Shaved Brussels Sprout Salad With Apples & Goat Cheese

  • 1 pound Brussels sprouts, trimmed
  • 2 medium Crisp apples, such as Honeycrisp, Fuji, Gala, or Granny Smith
  • 4 ounces Soft goat cheese, crumbled
  • 1/2 cup Toasted pecans or walnuts, roughly chopped
  • 1/3 cup Dried cranberries
  • 2 tablespoons Shallot, finely sliced
Vinaigrette
  • 1/4 cup Extra-virgin olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Pure maple syrup or honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Trim the Brussels sprouts, remove tough outer leaves, and shave them very thinly with a sharp knife, mandoline, or food processor slicing disk.
  2. Core the apples and slice them thinly or cut them into matchsticks. Toss them with a little lemon juice if preparing them in advance.
  3. Whisk the olive oil, lemon juice, apple cider vinegar, maple syrup or honey, Dijon mustard, kosher salt, and black pepper until emulsified.
  4. Combine the shaved Brussels sprouts, apples, shallot, and dried cranberries in a large bowl.
  5. Pour in most of the dressing and toss thoroughly. Let the salad stand for 10–15 minutes so the sprouts soften slightly and absorb the vinaigrette.
  6. Fold in the toasted nuts and goat cheese just before serving, then add the remaining dressing as needed.

Notes

For crisp nuts, toast them in a dry skillet over medium heat for about 5 minutes, stirring frequently, or in a 350°F oven for 6–8 minutes. Cool completely before adding. The dressed salad is best served after its 10–15 minute rest, while the goat cheese and nuts should be added at the end.
