Sweet Potato Rounds
  • 2 medium, about 1 1/2 pounds total Medium sweet potatoes
  • 1 1/2 tablespoons Olive oil
  • 1/2 teaspoon, divided Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
Cheese Topping
  • 4 ounces, softened Soft goat cheese or cream cheese
  • 2 tablespoons, finely chopped Fresh chives or scallions
Toppings
  • 1/4 cup Chopped toasted pecans
  • 2 tablespoons, optional Cooked, crumbled bacon
  • 1 teaspoon, or 1/2 teaspoon dried thyme Fresh thyme leaves
  • 1 tablespoon, optional Maple syrup or honey

Method
 

Step-by-Step
  1. Heat the oven to 425°F and line a large baking sheet with parchment paper.
  2. Scrub the sweet potatoes and peel them if desired. Cut them into approximately 1/3-inch-thick rounds, keeping the slices as uniform as possible.
  3. Arrange the rounds in one layer on the prepared baking sheet. Brush or toss them with the olive oil, then season with 1/4 teaspoon kosher salt and the black pepper.
  4. Roast for 10–12 minutes. Turn each slice and roast for another 8–12 minutes, until tender in the center and lightly browned around the edges.
  5. Stir the softened goat cheese or cream cheese with the remaining 1/4 teaspoon kosher salt and the chopped chives. Spread or pipe a small amount onto each warm sweet potato round.
  6. Finish the bites with toasted pecans, thyme, and bacon if using. Drizzle lightly with maple syrup or honey if desired, and serve warm.

Notes

Slice the sweet potatoes evenly and avoid overcrowding the baking sheet so the rounds brown properly. Toast pecans briefly in a dry skillet before chopping. For variations, use feta, sour cream, Greek yogurt, smoked paprika, cayenne, chili powder, walnuts, pumpkin seeds, pomegranate seeds, cranberries, or a small balsamic glaze.
