- Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish. Slice the sausage into 1/2-inch rounds, cut the potatoes into quarters or 1-inch pieces, trim and halve the green beans, and slice or chop the onion.
- Place the sausage, potatoes, green beans, onion, and minced garlic in the prepared baking dish. Add the butter or olive oil, kosher salt, black pepper, paprika, and optional Italian seasoning or thyme.
- Toss the ingredients gently in the dish so the seasonings and fat coat the vegetables and sausage. Pour the chicken broth around the ingredients rather than directly over the top.
- Cover the baking dish tightly with foil and bake for 30–35 minutes. The covered baking time allows the broth and trapped steam to soften the potatoes while keeping the green beans moist.
- Remove the foil and continue baking for 10–15 minutes, until the potatoes are fully tender and the sausage has browned around the edges. If needed, test a potato with a fork before taking the casserole from the oven.
- Stir gently before serving so the broth, seasonings, sausage, and vegetables mingle without breaking up the potatoes. Taste carefully and adjust the salt and pepper, remembering that smoked sausage is already seasoned.
Notes
For especially large or firm potato pieces, cut them smaller so they finish with the green beans. For a faster, more consistent bake, parboil the potatoes for 5–7 minutes before assembling. Refrigerate leftovers in a covered container and reheat gently until hot.
