- Heat the oven to 350°F (175°C) and lightly grease a 9-by-13-inch baking dish.
- Spread the sliced rhubarb evenly across the bottom of the prepared baking dish.
- Sprinkle the sugar over the rhubarb, followed by the dry strawberry gelatin.
- Sprinkle the dry yellow cake mix evenly over the fruit mixture. Do not prepare the cake mix according to the package directions.
- Pour the water over the cake mix, then drizzle the melted butter evenly across the surface.
- Bake for 45–50 minutes, until the top is golden and the rhubarb mixture is bubbling around the edges.
- Rest the dessert for at least 10–15 minutes before serving warm with vanilla ice cream or whipped cream.
Notes
Do not stir the layers together. If using frozen rhubarb, drain off excess liquid and do not add extra water, since extra moisture can make the dessert soupy.
