Roasted Tomato, Corn, and Zucchini Flatbread Pizza

Prepared naan flatbreads are topped with roasted cherry tomatoes, zucchini, corn, mozzarella, Parmesan, and basil for a colorful, crisp, vegetable-filled pizza. It serves four as a light main dish or appetizer.

Ingredients
  

Flatbread Pizza
  • 2 Naan breads or prepared flatbreads, about 8 inches each
Roasted Vegetables
  • 1 pint Cherry or grape tomatoes, halved
  • 1 about 8 ounces Medium zucchini, thinly sliced
  • 1 ear or cup Fresh corn kernels removed from the cob, or frozen corn, thawed
  • 2 tablespoons, divided Extra-virgin olive oil
  • 1 Garlic clove, minced
  • 1/2 teaspoon, divided Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
Cheese and Garnish
  • 1 cup, about 4 ounces Shredded mozzarella
  • 1/4 cup Grated Parmesan cheese
  • 2 tablespoons Fresh basil, chopped
Optional Toppings
  • 1 pinch Red-pepper flakes
  • 2 ounces Crumbled goat cheese or feta

Method
 

Step-by-Step
  1. Heat the oven to 425°F and line a rimmed baking sheet with parchment. Toss the tomatoes, zucchini, and corn with 1 tablespoon olive oil, the minced garlic, about 1/4 teaspoon kosher salt, and the black pepper.
  2. Spread the seasoned vegetables in a single layer on the prepared pan. Roast for 20–25 minutes, stirring once, until the tomatoes soften and begin to blister and the zucchini is lightly browned; drain off excess liquid if needed.
  3. Reduce the oven temperature to 400°F. Place the two flatbreads on a baking sheet and brush each lightly with the remaining 1 tablespoon olive oil.
  4. Sprinkle the mozzarella and Parmesan evenly over the flatbreads. Distribute the roasted vegetables over the cheese and add the goat cheese or feta if using.
  5. Bake for 8–12 minutes, until the flatbread edges are crisp and the cheese is melted and lightly browned. Finish with fresh basil and red-pepper flakes if desired, then slice and serve hot.

Notes

Do not overcrowd the roasting pan, or the vegetables may steam rather than brown. Pat or drain the roasted vegetables before assembling to prevent a soft crust. Add basil after baking so it stays fresh and aromatic.
