- Heat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the roasted peppers very dry with paper towels, then chop them finely.
- Mix the goat cheese, cream cheese, Parmesan, basil or parsley, garlic, salt, and pepper until smooth. Fold in the chopped roasted peppers.
- Roll the thawed puff pastry lightly into an approximately 10-inch square and cut it into 24 small squares.
- Place about 1 teaspoon of filling in the center of each pastry square. Fold each square into a triangle or bring the corners together into a parcel, then press the edges firmly with a fork to seal.
- Arrange the bites on the prepared baking sheet, leaving space between them. Chill the assembled bites for 10 to 15 minutes, then brush the tops with beaten egg.
- Bake for 15 to 18 minutes, until the pastry is puffed and deeply golden. Cool for 5 minutes before serving, with optional olive oil or balsamic glaze.
Notes
Drain and blot the peppers thoroughly so excess moisture does not make the pastry soggy. Do not overfill the pastry squares, and chill the assembled bites before baking for better puffing and less leakage.
