  • 1/2-1 cup Heavy cream, whole milk, or half-and-half, warmed

  • 1 1/2-2 teaspoons Kosher salt, plus more for cooking water
  • 1/2 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Heat the oven to 400°F. Slice the tops from the garlic heads to expose the cloves, drizzle with olive oil, wrap loosely in foil, and roast for 35 to 60 minutes, until soft, fragrant, and lightly golden.
  2. Cool the roasted garlic until it is comfortable to handle. Squeeze the softened cloves from their skins and mash them into a smooth paste.
  3. Place the potatoes in a large pot and cover with cold, generously salted water. Bring to a boil, then reduce to a simmer and cook for 15 to 25 minutes, until a fork passes through the chunks easily.
  4. Drain the potatoes thoroughly and return them to the warm pot for one to two minutes so excess moisture can evaporate.
  5. Warm the butter and cream, milk, or half-and-half separately. Add the roasted garlic paste, warm butter, and warm dairy to the potatoes.
  6. Mash with a hand masher for a rustic texture or press through a ricer for a smoother finish. Season with kosher salt and black pepper, adding more warm dairy as needed, but stop mixing as soon as the potatoes are creamy.

Notes

Yukon Gold potatoes provide a naturally buttery texture. Use one garlic head for mild roasted garlic flavor and up to three for a stronger version. Do not use a food processor or overmix, because excess agitation can make the potatoes gluey. Keep finished potatoes warm and garnish with chives, parsley, or a little Parmesan.
