Roasted Garlic Butter Parmesan Potatoes Everyone Loves

Baby potatoes are coated in garlic butter, Italian seasoning, and Parmesan, then roasted until crisp outside and tender inside. Fresh parsley adds a bright finish to this irresistible dinner side dish.

  • 2 lb (900 g) Baby potatoes, halved; quarter larger potatoes
Garlic Butter Mixture
  • 4 tbsp (56 g) Unsalted butter, melted
  • 4 cloves Garlic, finely minced
  • 1/2 cup (45-50 g) Finely grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp, plus more as needed Kosher salt
  • 1/4 tsp Freshly ground black pepper
Finishing
  • 1-2 tbsp Fresh parsley, chopped

Method
 

Step-by-Step
  1. Heat the oven to 425°F (220°C). Line a large baking sheet with parchment or lightly grease it.
  2. Wash and dry the potatoes thoroughly. Halve them, or quarter unusually large potatoes so all pieces are close in size.
  3. Stir together the melted butter, minced garlic, Italian seasoning, kosher salt, and black pepper.
  4. Toss the potatoes with most of the garlic-butter mixture and about half of the Parmesan. Arrange them cut-side down in a single layer.
  5. Roast for 20–25 minutes, then turn the potatoes. Brush or sprinkle them with the remaining garlic butter and Parmesan.
  6. Continue roasting for 5–10 minutes, until the potatoes are fork-tender and the edges are deeply golden. Garnish with chopped parsley and serve hot.

Notes

Dry the potatoes very well before seasoning, and avoid crowding the baking sheet so they roast instead of steam. Freshly grated Parmesan melts more evenly than pre-shredded cheese. Store leftovers covered in the refrigerator and reheat in a hot oven or air fryer until warmed and crisp.
