Restaurant-Style Instant Pot Pinto Beans

Tender dried pinto beans are pressure-cooked with onion, garlic, cumin, jalapeno, and bay leaf for a savory restaurant-style side dish. Mash some of the beans into the broth for a silky, spoon-coating texture.

  • 1 pound Dried pinto beans, rinsed and picked over
  • 6 cups Water or unsalted chicken broth
Aromatics and Seasoning
  • 1 medium Medium yellow onion, diced
  • 3–4 cloves Garlic, minced
  • 1 jalapeno Jalapeno, seeded and minced
  • 1–2 teaspoons Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1 leaf Bay leaf
  • 2 tablespoons Bacon fat, lard, or neutral oil

Method
 

Step-by-Step
  1. Rinse and sort the dried pinto beans, removing stones, debris, and shriveled beans. Soaking is optional; if soaked for 6–8 hours or overnight, drain them before cooking.
  2. Set the Instant Pot to Sauté. Add the bacon fat, lard, or neutral oil, then cook the diced onion for 3–5 minutes until softened.
  3. Add the garlic, jalapeno, cumin, chili powder, and black pepper. Cook for about 30 seconds, stirring constantly so the garlic and spices become fragrant without burning.
  4. Add the beans, water or unsalted chicken broth, and bay leaf. Stir well and scrape up any browned bits from the bottom of the pot.
  5. Lock the lid and cook unsoaked beans on High Pressure for 30–35 minutes. For soaked beans, cook on High Pressure for 15–20 minutes.
  6. Allow the pressure to release naturally for at least 15 minutes, preferably up to 20 minutes, before carefully venting any remaining pressure. Remove the bay leaf.
  7. Stir in the kosher salt if it was not added earlier, taste, and adjust the seasoning. Mash a small portion of the beans against the side of the pot or simmer uncovered for several minutes if you prefer a thicker, creamier texture.

Notes

Do not fill the Instant Pot more than halfway when cooking dried beans because they expand and produce foam. Natural release helps reduce split beans and foamy liquid. Refrigerate leftovers for up to 4 days or freeze them with some broth for up to 3 months.
