- Cut the seedless watermelon into one-inch cubes. If it is especially watery, let the cubes drain briefly in a colander or gently pat away excess juice with paper towels.
- Thinly slice one-quarter of a small red onion. For a milder flavor, soak the slices in cold water for 5 to 10 minutes, then drain them very well.
- Whisk the olive oil, lime or lemon juice, optional red-wine vinegar, kosher salt, and black pepper in a small bowl until combined.
- Place the watermelon, crumbled feta, red onion, and mint in a large serving bowl. Pour the dressing over the top shortly before serving.
- Gently toss with a large spoon or soft spatula, taking care not to crush the watermelon or break the feta into a paste.
- Serve immediately, or chill the finished salad for up to about 30 minutes. Taste before serving and adjust the salt only if needed, since feta can vary in saltiness.
Notes
Use cold, ripe watermelon for the best flavor and texture. Add the dressing and feta shortly before serving because watermelon releases liquid as it sits. The vinegar may be omitted for a brighter, lighter citrus dressing.
