- Blend the chilled watermelon until smooth. Strain it through a fine-mesh sieve if you prefer a particularly silky drink.
- Add the mint, fresh lime juice, and simple syrup to a pitcher. Muddle gently to release the mint’s aroma without crushing the leaves aggressively.
- Stir the watermelon juice and white rum into the pitcher until evenly combined. Taste and adjust the sweetness only if needed, especially when using very ripe watermelon.
- Fill four glasses with ice and divide the watermelon mixture among them. Leave enough room at the top of each glass for the soda.
- Top each cocktail with chilled club soda and stir gently once or twice. Garnish with fresh mint, lime wedges, and small watermelon pieces, then serve immediately.
Notes
Use very ripe, cold watermelon for the best flavor and natural sweetness. Muddle mint lightly because over-muddling can release bitter flavors. Add club soda immediately before serving to preserve the carbonation. For a stronger watermelon flavor, use frozen watermelon cubes in place of some of the ice. For a nonalcoholic version, omit the rum and add extra club soda or sparkling water.
