Step-by-Step
- Wash and dry the watermelon. Cut off both ends, then cut one round slice from the center about 1 to 1 1/2 inches thick.
- Pat the watermelon slice dry with paper towels. This removes surface moisture so the yogurt adheres more easily and the finished pizza is less watery.
- Stir together the Greek yogurt, honey or pure maple syrup, and vanilla extract until smooth and evenly combined.
- Spread the yogurt mixture over the top of the watermelon, leaving a narrow border around the edge.
- Arrange the strawberries, blueberries, raspberries, kiwi, and optional blackberries over the yogurt.
- Sprinkle with shredded coconut, fresh mint, and optional lemon or lime zest. Cut the round into 6–8 wedges and serve immediately, or chill for up to 30 minutes.
Notes
Use thick Greek yogurt rather than regular yogurt because its lower moisture content helps prevent sliding. Assemble close to serving time because watermelon releases liquid. For variations, mix softened light cream cheese with the Greek yogurt, use coconut yogurt for a dairy-free version, or add peaches, mango, grapes, pomegranate seeds, or sliced banana.
