- Spread the 1-inch watermelon cubes on a parchment-lined tray in a single layer. Freeze until completely solid, at least 4 hours or preferably overnight.
- If making simple syrup, warm 2 tablespoons of granulated sugar with 2 tablespoons of water in a small saucepan just until the sugar dissolves. Cool the syrup completely before blending.
- Add the frozen watermelon, chilled rosé, lime juice, and simple syrup or agave to a high-powered blender. Blend until smooth and slushy, adding ice gradually if the mixture is too thin or not cold enough.
- Taste the frosé and adjust the balance with more lime juice for acidity or more sweetener if needed. Pour immediately into chilled glasses and garnish with lime wedges, watermelon pieces, or mint.
Notes
Freeze watermelon in a single layer so the cubes remain easy to blend. Dry rosé works especially well because the fruit and sweetener add plenty of sweetness. For an extra-thick drink, freeze some or all of the rosé in a shallow container until semi-frozen before blending. Serve immediately for the best slushy texture.
