Refreshing Viento Fruit Parfait

A colorful no-cook parfait made with Greek yogurt, fresh mixed fruit, granola, and an optional honey or maple syrup drizzle. It is prepared in about 15 minutes and can be chilled briefly before serving.

Ingredients
  

Yogurt Layer
  • 2 cups Vanilla or plain Greek yogurt
Fresh Fruit
  • 1 cup Sliced strawberries
  • 1/2 cup Blueberries
  • 1/2 cup Diced mango, peaches, or kiwi
Crunchy Layer
  • 1 cup Granola
Optional Finishing Ingredients
  • 2 tablespoons Honey or maple syrup
  • 1 teaspoon Lemon or lime juice
  • as needed Fresh mint

Method
 

Step-by-Step
  1. Wash the fruit thoroughly and dry it well. Hull and slice the strawberries, keep the blueberries whole, and dice the mango, peaches, or kiwi into bite-size pieces.
  2. If using apples, bananas, or peaches, toss the cut fruit with the lemon or lime juice to help limit browning. Keep the fruit well drained so the parfait layers stay distinct.
  3. Spoon a small layer of Greek yogurt into the bottom of each serving glass. Add a layer of fruit, followed by a layer of granola.
  4. Repeat the yogurt, fruit, and granola layers until the glasses are filled. Finish with a light drizzle of honey or maple syrup and a sprig of fresh mint, if desired.
  5. Serve immediately for crunchy granola, or refrigerate the assembled yogurt-and-fruit layers for 15 to 30 minutes and add the granola immediately before serving.

Notes

Use thick Greek yogurt and well-drained fruit for clean layers. Granola softens when it sits in yogurt, so keep it separate for make-ahead parfaits and sprinkle it on just before serving.
