Step-by-Step
- Wash the fruit thoroughly and dry it well. Hull and slice the strawberries, keep the blueberries whole, and dice the mango, peaches, or kiwi into bite-size pieces.
- If using apples, bananas, or peaches, toss the cut fruit with the lemon or lime juice to help limit browning. Keep the fruit well drained so the parfait layers stay distinct.
- Spoon a small layer of Greek yogurt into the bottom of each serving glass. Add a layer of fruit, followed by a layer of granola.
- Repeat the yogurt, fruit, and granola layers until the glasses are filled. Finish with a light drizzle of honey or maple syrup and a sprig of fresh mint, if desired.
- Serve immediately for crunchy granola, or refrigerate the assembled yogurt-and-fruit layers for 15 to 30 minutes and add the granola immediately before serving.
Notes
Use thick Greek yogurt and well-drained fruit for clean layers. Granola softens when it sits in yogurt, so keep it separate for make-ahead parfaits and sprinkle it on just before serving.
