Refreshing Spiked Peach Arnold Palmer Cocktail

A pitcher-style summer cocktail made with equal parts iced tea and lemonade, bourbon or vodka, peach schnapps, fresh peaches, and lemon. It serves about 6 drinks and is ideal for warm-weather gatherings.

  • 4 cups Chilled unsweetened black iced tea
  • 4 cups Chilled lemonade
  • 1 1/2 cups Bourbon or vodka
  • 1/2 cup Peach schnapps or peach liqueur
  • 2 peaches Ripe peaches, thinly sliced
  • 1 lemon Lemon, thinly sliced
  • as needed Ice
  • optional Fresh mint
Optional Peach Simple Syrup
  • 1 peach Ripe peach, chopped
  • 1/2 cup Granulated sugar
  • 1/2 cup Water

Method
 

Step-by-Step
  1. For optional peach syrup, combine the chopped peach, sugar, and water in a small saucepan. Bring the mixture to a simmer and cook for about 5 minutes, stirring until the sugar dissolves.
  2. Remove the syrup from the heat and let it steep for 10 to 15 minutes. Strain and cool completely before adding it to the cocktail.
  3. In a large pitcher, combine the chilled black iced tea, lemonade, bourbon or vodka, and peach schnapps. Stir gently until the liquids are evenly mixed.
  4. Add the sliced peaches and lemon slices to the pitcher. Stir carefully so the fruit remains attractive and does not break apart.
  5. Taste the mixture and add peach syrup for more sweetness and peach flavor, or add a little additional lemonade for more brightness. Serve over ice and garnish with peach slices and fresh mint.

Notes

Chill the tea, lemonade, and spirits before mixing to reduce dilution. For stronger tea flavor, brew about 5 black tea bags in 4 cups of water. Fresh peach slices can be macerated with 1 tablespoon of sugar for 10 minutes before being added to the pitcher.
