Refreshing Pineapple Infused Water Recipe

Fresh pineapple, cold filtered water, and optional mint and lime create a naturally fruity, refreshing drink without added sweetener. Chill for at least 1 hour, with the best flavor developing after 2 to 4 hours.

  • 2 cups (about 300 g) Fresh pineapple, peeled, cored, and cut into chunks
  • 8 cups (2 quarts) Cold filtered water
Optional Additions
  • 8-10 leaves Fresh mint leaves, lightly bruised or torn
  • 1/2 lime Lime, thinly sliced

Method
 

Step-by-Step
  1. Cut the peeled and cored fresh pineapple into bite-size chunks. Lightly bruise or tear the mint leaves if using, and thinly slice half of a lime.
  2. Add the pineapple chunks to a large pitcher. Add the optional mint and lime, keeping the citrus slices limited so the peel does not make the water bitter.
  3. Pour 8 cups of cold filtered water into the pitcher and stir gently to combine without crushing the fruit.
  4. Cover the pitcher and refrigerate for 1 to 4 hours. The flavor is best after 2 to 4 hours, although the drink may be infused longer if the fruit is strained after about 12 hours.
  5. Serve chilled over ice. Eat the pineapple afterward or discard it, then refrigerate any remaining infused water and use it within 24 hours for the best flavor and quality.

Notes

Fresh pineapple provides a brighter flavor than canned pineapple. Lightly bruise mint to release its oils without making the water excessively bitter. Do not leave lime slices in the pitcher for more than several hours. This is infused water, not pineapple agua fresca, which is typically blended and may include sugar.
