- Rinse the mint thoroughly under cool water. Remove any wilted leaves, then gently crush or bruise the leaves and stems with your hands to release their natural oils.
- Bring 4 cups of water just to a boil in a saucepan or kettle. Avoid boiling the mint itself for an extended time, since steeping preserves a cleaner, fresher flavor.
- Place the prepared mint in a teapot, heatproof jug, or saucepan. Pour the hot water over the mint, cover the vessel, and steep for 5 minutes for a light tea or up to 10 minutes for a stronger taste.
- Strain the tea into four cups. Stir in 1–2 tablespoons of honey, sugar, or another sweetener while the tea is hot, if desired.
- Add 1–2 teaspoons of fresh lemon juice or place lemon slices in the cups according to taste. Serve hot, or cool the infusion and pour it over plenty of ice for iced mint tea.
Notes
Keep the tea covered while it steeps to retain the fragrant mint oils. For iced tea, steep for the full 10 minutes so the melting ice does not dilute the flavor too much.
