Refreshing Mint and Rosemary Lemonade with Vanilla

Freshly squeezed lemon juice meets a rosemary, mint, and vanilla simple syrup in this fragrant homemade lemonade. Serve it well chilled over ice for a crisp, refreshing drink that makes approximately 2 quarts.

Ingredients
  

Vanilla Herb Syrup
  • 1 cup Granulated sugar
  • 1 cup Water
  • 2 sprigs Fresh rosemary sprigs
  • 1 or 1 bean or teaspoon Vanilla bean, split lengthwise, or pure vanilla extract
Lemonade
  • 1/2 cup Fresh mint leaves, lightly packed
  • 1 1/2 cups Freshly squeezed lemon juice
  • 4-5 cups Cold water
Serving
  • As needed Ice
  • As needed Lemon slices and extra mint or rosemary

Method
 

Step-by-Step
  1. Combine the sugar and 1 cup water in a saucepan. Lightly bruise the rosemary sprigs without crushing them, then add them and the split vanilla bean to the pan.
  2. Warm the mixture over medium heat, stirring until the sugar dissolves. Bring it only to a gentle simmer, avoiding a vigorous boil, and cook for about 5 minutes.
  3. Remove the saucepan from the heat and lightly bruise the mint leaves before adding them to the hot syrup. Let the mixture steep for 15 to 20 minutes.
  4. Strain the syrup into a heatproof container, removing the rosemary, mint, and vanilla bean. If using vanilla extract instead of a bean, stir 1 teaspoon into the strained syrup after it has been removed from the heat.
  5. Pour the infused syrup and fresh lemon juice into a large pitcher. Add 4 cups of cold water and stir thoroughly.
  6. Taste the lemonade and add the remaining 1 cup cold water if it is too sweet or too strong. Chill for 30 to 60 minutes, then serve over ice with lemon slices and fresh herbs.

Notes

Use fresh lemon juice for the brightest flavor. Chill the lemonade before adding ice so it does not become diluted. Keep refrigerated and enjoy within 2 to 3 days for the freshest taste.
