Refreshing Feta Watermelon Salad

A quick, no-cook summer salad made with chilled watermelon, feta cheese, mint, red onion, and a simple lime dressing. Optional cucumber or Kalamata olives add extra crunch and Mediterranean character.

  • 6 cups Seedless watermelon, cut into 1-inch cubes
  • 1 cup (about 150 g) Feta cheese, crumbled or cut into small cubes
  • 1/4 cup loosely packed Fresh mint, chopped or torn
  • 1/4 small onion Red onion, very thinly sliced
Dressing
  • 2 tablespoons Extra-virgin olive oil
  • 1 tablespoon Fresh lime juice
  • 1/4 teaspoon, or to taste Kosher salt
  • 1/8 teaspoon, or to taste Freshly ground black pepper
Optional Add-Ins
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 cup Cucumber, diced
Optional Finish
  • 1-2 teaspoons Balsamic glaze

Method
 

Step-by-Step
  1. Cut the seedless watermelon into 1-inch cubes. If the watermelon is especially juicy, place the cubes in a colander for a few minutes so excess liquid can drain away.
  2. Whisk the extra-virgin olive oil, fresh lime juice, kosher salt, and freshly ground black pepper together in a small bowl until the dressing looks lightly combined.
  3. Add the watermelon, feta, fresh mint, and thinly sliced red onion to a large serving bowl. Add the Kalamata olives or diced cucumber if using.
  4. Pour the dressing over the salad and gently toss just until the ingredients are coated. Take care not to crush the watermelon or break up the feta too much.
  5. Serve the salad immediately, or refrigerate it for up to about 1 hour before serving. If desired, drizzle 1 to 2 teaspoons of balsamic glaze over the finished salad just before it reaches the table.

Notes

Chill the watermelon before assembling for the most refreshing texture. Add the dressing and mint shortly before serving because early mixing can make the watermelon release liquid and can wilt or darken the herbs. A block of feta generally offers better moisture and flavor than pre-crumbled feta.
