- Cut the cantaloupe in half and scoop out the seeds. Remove the rind, then cut the flesh into approximately one-inch cubes or use a melon baller.
- Place the cantaloupe, thinly sliced red onion, and mint in a large serving bowl. Keep the mixture loose so the melon remains intact.
- Whisk together the lime juice, olive oil, honey, kosher salt, and black pepper in a small bowl. Continue whisking until the honey is dispersed throughout the dressing.
- Pour the dressing over the melon mixture and gently toss. Use a large spoon or soft spatula and avoid stirring too forcefully.
- Add the crumbled feta and fold it in carefully. Serve immediately, or chill the salad for up to about 30 minutes before serving.
Notes
Choose a cantaloupe that feels heavy for its size, smells sweet and musky at the stem end, and yields slightly when pressed. If the cut melon is very juicy, drain or blot it briefly so the dressing is not diluted and the feta stays firm. For advance preparation, refrigerate the cut melon and dressing separately, then combine them with the feta and herbs shortly before serving.
