Raspberry Thumbprint Cookies

Tender butter cookies are shaped by hand, pressed with a thumbprint, and filled with glossy raspberry jam. Optional chopped nuts add a delicate crunch around the edges.

Ingredients
  

Cookie Dough
  • 1 cup (226 g) Unsalted butter, softened
  • 2/3 cup (135 g) Granulated sugar
  • 2 Large egg yolks
  • 1 teaspoon Pure vanilla extract
  • 1/2 teaspoon Almond extract, optional
  • 2 cups (250–255 g) All-purpose flour
  • 1/4 teaspoon Fine salt
Filling
  • 1/2 cup (about 150 g) Raspberry preserves or seedless raspberry jam
Optional Coating
  • 1/3 cup Finely chopped almonds or pecans
  • 1 Egg white, lightly beaten

Method
 

Step-by-Step
  1. Beat the softened butter and granulated sugar together for 2–3 minutes, until light and creamy. Add the egg yolks, vanilla extract, and optional almond extract, then mix until smooth.
  2. Whisk the flour and fine salt together in a separate bowl. Add the dry ingredients gradually to the butter mixture, mixing only until a soft dough forms.
  3. Cover the dough and refrigerate it for 30–60 minutes. Chilling makes the dough easier to shape and helps the cookies hold their form in the oven.
  4. Heat the oven to 350°F (175°C) and line baking sheets with parchment paper. Portion the dough into balls using about 1 tablespoon per cookie.
  5. If using the optional coating, roll each dough ball in lightly beaten egg white and then in finely chopped almonds or pecans. Arrange the balls about 2 inches apart on the prepared baking sheets.
  6. Press a deep indentation into the center of every dough ball with your thumb or the rounded end of a wooden spoon. Fill each indentation with approximately 1/2 teaspoon of raspberry jam, taking care not to overfill.
  7. Bake for 10–13 minutes, until the edges are set and just lightly golden while the centers remain fairly pale. Cool the cookies on the baking sheet for about 5 minutes, then transfer them to a wire rack.

Notes

Use thick raspberry preserves or seedless raspberry jam to reduce bubbling and sogginess. Do not overbake. If the indentations puff during baking, gently press them down while the cookies are warm and add a small amount of jam.
