Quick & Easy Healthy No-Bake Bars

Chewy homemade oat bars made with dates, peanut butter, honey or maple syrup, and almonds. These no-bake bars are ready with simple mixing and chilling, with optional chocolate chips, pumpkin seeds, or dried cranberries.

  • 1 1/2 cups Old-fashioned rolled oats
  • 1 cup Pitted soft dates
  • 1/2 cup Creamy natural peanut butter
  • 1/3 cup Honey or pure maple syrup
  • 1/2 cup Roasted almonds, roughly chopped
Flavoring
  • 1/4 teaspoon Fine salt
  • 1 teaspoon Vanilla extract
Optional Add-Ins
  • 1/3 cup Mini chocolate chips, pumpkin seeds, or dried cranberries

Method
 

Step-by-Step
  1. Line an 8-inch or 9-inch square pan with parchment paper, leaving an overhang on two sides. If the dates are firm, soak them in hot water for 5–10 minutes, then drain and pat them very dry.
  2. Process the dates in a food processor until they form a thick, sticky paste. Warm the peanut butter and honey or maple syrup in a small saucepan over low heat for about 1–2 minutes, stirring until smooth without boiling.
  3. Remove the peanut butter mixture from the heat and stir in the vanilla and salt. In a large bowl, combine the oats, chopped almonds, and optional chocolate chips, pumpkin seeds, or dried cranberries.
  4. Add the date paste and warm peanut butter mixture to the bowl. Stir thoroughly until every oat is coated and the mixture holds together when pressed.
  5. Transfer the mixture to the lined pan and press it very firmly and evenly. Use the bottom of a glass or a piece of parchment paper to compact the mixture, paying special attention to the corners.
  6. Refrigerate for 1–2 hours, or freeze for 20–30 minutes, until firm. Lift the slab from the pan using the parchment overhang and cut into 12 bars.

Notes

Soft, sticky dates and firm pressing are essential for bars that hold together. Store the finished bars in an airtight container in the refrigerator for up to 1 week. For a nut-free version, use sunflower-seed butter and pumpkin or sunflower seeds instead of peanut butter and almonds.
