Quick and Easy Cinnamon Muffin Recipe

These tender cinnamon muffins are lightly sweet, warmly spiced, and ready in approximately 30 to 35 minutes. Finish them with melted butter and cinnamon sugar for an extra delicious breakfast treat.

Ingredients
  

Muffins
  • 2 cups (250 g) All-purpose flour
  • 1 cup (200 g) Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Salt
  • 1 large Large egg
  • 1 cup (240 ml) Milk
  • 1/4 cup (60 ml) Vegetable oil or melted butter
  • 1 teaspoon Vanilla extract
Optional Cinnamon Topping
  • 1/4 cup (50 g) Granulated sugar
  • 1/2 teaspoon Ground cinnamon
  • 1 tablespoon Melted butter, for brushing

Method
 

Step-by-Step
  1. Heat the oven to 400°F (200°C). Line a 12-cup muffin pan with paper liners or grease it lightly.
  2. Whisk together the flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  3. In a separate bowl, whisk the egg, milk, vegetable oil or melted butter, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients. Stir just until combined; a few small lumps are fine.
  5. Divide the batter among the muffin cups, filling each about two-thirds to three-quarters full.
  6. Bake for 18 to 22 minutes, until the tops are lightly golden and a toothpick inserted in the center comes out clean.
  7. Cool the muffins in the pan for about 5 minutes, then transfer them to a rack.
  8. For the cinnamon-sugar finish, brush warm muffins with melted butter and sprinkle with the cinnamon-sugar mixture.

Notes

Do not overmix the batter. Portion it with an ice-cream scoop for evenly shaped muffins and bake immediately in a fully preheated oven. Store cooled muffins covered at room temperature and rewarm briefly before serving.
