- Heat the oven to 400°F (200°C). Line a 12-cup muffin pan with paper liners or grease it lightly.
- Whisk together the flour, sugar, baking powder, cinnamon, and salt in a large bowl.
- In a separate bowl, whisk the egg, milk, vegetable oil or melted butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients. Stir just until combined; a few small lumps are fine.
- Divide the batter among the muffin cups, filling each about two-thirds to three-quarters full.
- Bake for 18 to 22 minutes, until the tops are lightly golden and a toothpick inserted in the center comes out clean.
- Cool the muffins in the pan for about 5 minutes, then transfer them to a rack.
- For the cinnamon-sugar finish, brush warm muffins with melted butter and sprinkle with the cinnamon-sugar mixture.
Notes
Do not overmix the batter. Portion it with an ice-cream scoop for evenly shaped muffins and bake immediately in a fully preheated oven. Store cooled muffins covered at room temperature and rewarm briefly before serving.
