  • 4 cups Whole milk
  • 1 cup or 6 cup or ounces White chocolate chips or finely chopped white chocolate
  • 1/2 cup Pumpkin puree
  • 1 teaspoon Pumpkin pie spice
  • 1 teaspoon Vanilla extract
  • 1/8 teaspoon Fine salt

  • As needed Whipped cream
  • As needed Ground cinnamon or extra pumpkin pie spice

Method
 

Step-by-Step
  1. Add the whole milk, pumpkin puree, pumpkin pie spice, and fine salt to a medium saucepan. Whisk over medium-low heat until the mixture is smooth and steaming, about 5-7 minutes, taking care not to let it boil.
  2. Reduce the heat to low and add the white chocolate chips or finely chopped white chocolate. Whisk steadily for about 2-3 minutes, until the chocolate has completely melted and the drink is smooth.
  3. Remove the saucepan from the heat and stir in the vanilla extract. Pour the hot chocolate into four mugs, then finish each serving with whipped cream and a light sprinkle of cinnamon or pumpkin pie spice.

Notes

Use 100% canned pumpkin puree rather than pumpkin pie filling. Real white chocolate made with cocoa butter melts more smoothly than products made mostly with vegetable oils. Keep the heat low after adding the chocolate because boiling can scorch white chocolate or make it grainy. For a richer drink, replace 1 cup of the milk with half-and-half or heavy cream.
