Pokémon Pecha Poffins

Soft, peach-flavored mini muffins inspired by the Pecha Berry Poffins of Pokémon. Finish them with a thin pink glaze and simple candy decorations for an adorable themed dessert.

  • 1 3/4 cups (210 g) All-purpose flour
  • 3/4 cup (150 g) Granulated sugar
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup (113 g) Unsalted butter, melted and slightly cooled
  • 1 large Large egg
  • 1/2 cup (120 ml) Milk
  • 1 teaspoon Vanilla extract
  • 1/2 cup (about 150-160 g) Peach preserves or finely chopped, well-drained canned peaches
  • A few drops, optional Pink or red food coloring
Optional Glaze
  • 1 cup (120 g) Powdered sugar
  • 1-2 tablespoons Milk
Optional Decoration
  • As desired Pink food coloring, sprinkles, or small heart-shaped candy decorations

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease it.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. In a second bowl, whisk the melted and slightly cooled butter, egg, milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir only until combined. A few small lumps are fine, so avoid mixing longer than necessary.
  5. Fold in the peach preserves or thoroughly drained chopped peaches. Add a few drops of pink food coloring if desired, mixing gently until the color is lightly distributed.
  6. Divide the batter among the muffin cups, filling each about two-thirds full.
  7. Bake for 18–22 minutes, until the tops spring back lightly and a toothpick inserted in the center comes out clean or with only a few moist crumbs.
  8. Cool the poffins in the pan for about 5 minutes, then transfer them to a wire rack. Once fully cooled, add glaze and decorations.

Notes

Peach preserves provide the strongest and most consistent flavor. If using canned or fresh peaches, drain them thoroughly. Do not overmix the batter, and wait until the poffins are cool before glazing.
