- Heat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease it.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- In a second bowl, whisk the melted and slightly cooled butter, egg, milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir only until combined. A few small lumps are fine, so avoid mixing longer than necessary.
- Fold in the peach preserves or thoroughly drained chopped peaches. Add a few drops of pink food coloring if desired, mixing gently until the color is lightly distributed.
- Divide the batter among the muffin cups, filling each about two-thirds full.
- Bake for 18–22 minutes, until the tops spring back lightly and a toothpick inserted in the center comes out clean or with only a few moist crumbs.
- Cool the poffins in the pan for about 5 minutes, then transfer them to a wire rack. Once fully cooled, add glaze and decorations.
Notes
Peach preserves provide the strongest and most consistent flavor. If using canned or fresh peaches, drain them thoroughly. Do not overmix the batter, and wait until the poffins are cool before glazing.
