Step-by-Step
- Heat the oven to 400°F and lightly grease a 9-by-13-inch baking dish.
- If the chicken breasts are thick, pound them to an even thickness. Pat them dry and rub with olive oil, Italian seasoning, garlic powder, kosher salt, and black pepper.
- Arrange the seasoned chicken in the prepared baking dish. Spoon the pizza sauce evenly over each breast.
- Sprinkle the mozzarella and Parmesan over the sauce, then arrange the pepperoni slices across the top.
- Bake uncovered for 25 to 30 minutes, depending on the thickness of the chicken. Check the center of each breast with an instant-read thermometer and remove the dish when it reaches 165°F.
- For a more browned and bubbly topping, broil for 1 to 2 minutes at the end, watching closely. Let the chicken rest for about 5 minutes before serving.
Notes
Pounding thick chicken breasts to an even thickness helps them cook at the same rate. Use a thermometer instead of relying only on the clock, because overbaking is the main cause of dry chicken. Refrigerate leftovers promptly and reheat gently until hot.
