A light, creamy no-cook salad made with crushed pineapple, vanilla pudding, whipped topping, marshmallows, coconut, and optional nuts. Chill it thoroughly for a soft, fluffy texture.

  • 1 20-ounce can Crushed pineapple, undrained
  • 1 3.4-ounce package Instant vanilla pudding mix
  • 1 8-ounce container Frozen whipped topping, thawed
  • 2 cups Miniature marshmallows
  • 1/2 cup Sweetened shredded coconut
Optional Add-Ins and Garnish
  • 1/2 cup Chopped pecans or walnuts
  • As needed for garnish Maraschino cherries

Method
 

Step-by-Step
  1. Add the undrained crushed pineapple and instant vanilla pudding mix to a large bowl. Stir for about 1–2 minutes, until the pudding mix is fully moistened and the mixture begins to thicken.
  2. Fold in the thawed whipped topping with a spatula. Mix gently just until the pineapple and pudding mixture look evenly combined, taking care not to deflate the topping.
  3. Fold in the miniature marshmallows, shredded coconut, and chopped pecans or walnuts if using. Use slow, broad strokes so the fluffy mixture stays airy.
  4. Cover the bowl and refrigerate the salad for at least 1 hour. Chilling for 2–4 hours gives the marshmallows time to soften and allows the salad to set.
  5. Just before serving, garnish with maraschino cherries, extra coconut, or a few additional nuts. Spoon the salad into serving dishes while it is cold.

Notes

Do not drain the pineapple because its juice hydrates the pudding mix and creates the creamy texture. Thaw the whipped topping in the refrigerator, and add nuts shortly before serving if you want them to stay crisp. Added fruit should be drained well.
