A Southern-style yellow squash casserole made with tender squash, onion, sharp cheddar, creamy egg custard, and a buttery cracker topping. It serves 6 and bakes until hot, bubbling, and lightly browned.

Ingredients
  

Squash Mixture
  • 2 pounds Yellow summer squash, sliced about 1/4 inch thick
  • 1 small Small yellow onion, finely chopped
Casserole
  • 1 cup Sharp cheddar cheese, shredded
  • 2 Large eggs
  • 3/4 cup Whole milk
  • 4 tablespoons Unsalted butter, divided
Topping
  • 1 sleeve, about 30–35 crackers Buttery round crackers, crushed
Seasoning
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper

Method
 

Step-by-Step
  1. Heat the oven to 375°F and lightly grease a 2-quart baking dish.
  2. Place the sliced squash and chopped onion in a saucepan with a small amount of water. Cover and simmer for 8–10 minutes, until tender but still holding its shape.
  3. Drain the squash and onion very well. Gently press the mixture in a colander if needed to remove excess water.
  4. Melt 2 tablespoons of butter and combine it with most of the crushed crackers, reserving about 1/2 cup of crumbs for the topping.
  5. Whisk the eggs, milk, kosher salt, and black pepper together in a large bowl.
  6. Stir in the drained squash and onion, 3/4 cup of the cheddar, and the buttered cracker mixture.
  7. Transfer the mixture to the prepared baking dish. Top with the remaining cheddar and reserved cracker crumbs, then dot with the remaining 2 tablespoons of butter.
  8. Bake uncovered at 375°F for 25–30 minutes, until hot, bubbling, and lightly browned. Rest for 5–10 minutes before serving.

Notes

Thoroughly drain the cooked squash to prevent a watery casserole, and do not overcook it before baking. For variations, use 1/2 cup sour cream instead of the milk, combine yellow squash with zucchini, or replace buttery round crackers with panko breadcrumbs.
