- Heat the oven to 350°F (175°C) and line baking sheets with parchment paper. Set the prepared pans aside while you make the dough.
- Cream the softened butter, creamy peanut butter, granulated sugar, and confectioners’ sugar until the mixture is light and smooth.
- Beat in the eggs one at a time, mixing after each addition, then blend in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry mixture to the peanut butter mixture, mixing only until combined.
- If the dough feels very soft, chill it for about 30 minutes. Scoop rounded tablespoons of dough, roll them into balls, and place them about 2 inches apart on the prepared baking sheets.
- Flatten each dough ball lightly with a fork, making a traditional crosshatch pattern. Bake for 8 to 10 minutes, until the edges are set while the centers remain slightly soft and pale.
- Let the cookies cool on the baking sheet for 5 minutes so they can finish setting. Transfer them to a cooling rack and cool further before serving.
Notes
Measure flour by spooning it into a measuring cup and leveling it. Use regular creamy peanut butter rather than highly oily natural peanut butter, and avoid overbaking so the cookies retain their soft meltaway texture.
