  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt

Step-by-Step
  1. Heat the oven to 350°F (175°C) and line baking sheets with parchment paper. Set the prepared pans aside while you make the dough.
  2. Cream the softened butter, creamy peanut butter, granulated sugar, and confectioners’ sugar until the mixture is light and smooth.
  3. Beat in the eggs one at a time, mixing after each addition, then blend in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry mixture to the peanut butter mixture, mixing only until combined.
  5. If the dough feels very soft, chill it for about 30 minutes. Scoop rounded tablespoons of dough, roll them into balls, and place them about 2 inches apart on the prepared baking sheets.
  6. Flatten each dough ball lightly with a fork, making a traditional crosshatch pattern. Bake for 8 to 10 minutes, until the edges are set while the centers remain slightly soft and pale.
  7. Let the cookies cool on the baking sheet for 5 minutes so they can finish setting. Transfer them to a cooling rack and cool further before serving.

Notes

Measure flour by spooning it into a measuring cup and leveling it. Use regular creamy peanut butter rather than highly oily natural peanut butter, and avoid overbaking so the cookies retain their soft meltaway texture.
