- Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Beat the softened butter, creamy peanut butter, granulated sugar, and brown sugar for 2-3 minutes, until smooth and creamy.
- Beat in the room-temperature egg and vanilla extract until fully combined.
- Whisk the flour, baking soda, baking powder, and salt together in a separate bowl.
- Gradually add the dry ingredients to the peanut butter mixture, mixing only until no dry flour remains.
- Chill the dough for about 30 minutes if you prefer thicker cookies with less spreading.
- Scoop approximately 1 1/2 tablespoons of dough per cookie and roll each portion into a ball.
- Roll the dough balls in granulated sugar if desired, then place them about 2 inches apart on the prepared baking sheets.
- Press each dough ball gently with a fork in a crosshatch pattern and bake for 9-12 minutes, until the edges are set but the centers still look slightly soft.
- Cool the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack to finish cooling and firming.
