Peach Filling
  • 4 Large ripe but still firm peaches
Peach Crisp Topping
  • 1/2 cup Old-fashioned rolled oats
  • 1/4 cup Packed light brown sugar
  • 1/4 cup All-purpose flour
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Kosher salt
  • 4 tablespoons Unsalted butter, melted
For Serving
  • As needed Vanilla ice cream

Method
 

Step-by-Step
  1. Heat the oven to 375°F (190°C) and lightly grease a small baking dish.
  2. Halve the peaches lengthwise and remove the pits. Scoop out some of the peach flesh, leaving a sturdy shell about 1/4 inch thick, then chop the removed flesh.
  3. Combine the chopped peach, rolled oats, brown sugar, flour, cinnamon, kosher salt, and melted butter in a bowl.
  4. Arrange the peach halves cut-side up in the prepared baking dish. Divide the crisp mixture among the peaches, mounding it slightly.
  5. Bake for 20 to 25 minutes, until the peach shells are tender and the oat topping is visibly browned and crisp.
  6. Serve the baked peaches warm with vanilla ice cream.

Notes

Choose peaches that yield slightly to pressure but are not soft. Leave a substantial peach wall when scooping so the halves hold their shape. For the crispiest topping, serve the peaches immediately after baking.
