- Heat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil the surface.
- Halve the tomatoes lengthwise and pat the cut surfaces dry. If they are especially juicy, remove excess seeds or watery pulp.
- Arrange the tomatoes cut-side up on the prepared baking sheet and brush them with about 1 tablespoon of the olive oil.
- In a small bowl, combine the Parmesan, breadcrumbs, garlic, Italian seasoning, salt, pepper, and remaining olive oil until evenly mixed.
- Spoon the Parmesan mixture over the tomato halves and gently press it down so the topping adheres.
- Roast for 15 to 20 minutes, until the tomatoes are tender and the topping is golden and crisp. For extra browning, broil for 1 to 2 minutes at the end while watching closely.
- Let the tomatoes rest for 2 to 3 minutes, then garnish with chopped parsley or basil and serve warm.
Notes
Freshly grated Parmesan browns more evenly than pre-shredded cheese. For a softer, cheese-forward topping, omit the breadcrumbs and use about 2/3 cup Parmesan. Store leftovers covered in the refrigerator and reheat in a hot oven or toaster oven to help the topping regain some crispness.
