Parmesan Roasted Tomatoes

  • 4 medium Roma or plum tomatoes, halved lengthwise
  • 2 tablespoons Extra-virgin olive oil, divided
  • 1/2 cup Finely grated Parmesan cheese
  • 1/4 cup Plain or Italian-seasoned panko breadcrumbs
  • 1 clove Garlic, finely minced
  • 1 teaspoon Italian seasoning or dried oregano
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper

  • 1 tablespoon Fresh parsley or basil, chopped

Method
 

Step-by-Step
  1. Heat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil the surface.
  2. Halve the tomatoes lengthwise and pat the cut surfaces dry. If they are especially juicy, remove excess seeds or watery pulp.
  3. Arrange the tomatoes cut-side up on the prepared baking sheet and brush them with about 1 tablespoon of the olive oil.
  4. In a small bowl, combine the Parmesan, breadcrumbs, garlic, Italian seasoning, salt, pepper, and remaining olive oil until evenly mixed.
  5. Spoon the Parmesan mixture over the tomato halves and gently press it down so the topping adheres.
  6. Roast for 15 to 20 minutes, until the tomatoes are tender and the topping is golden and crisp. For extra browning, broil for 1 to 2 minutes at the end while watching closely.
  7. Let the tomatoes rest for 2 to 3 minutes, then garnish with chopped parsley or basil and serve warm.

Notes

Freshly grated Parmesan browns more evenly than pre-shredded cheese. For a softer, cheese-forward topping, omit the breadcrumbs and use about 2/3 cup Parmesan. Store leftovers covered in the refrigerator and reheat in a hot oven or toaster oven to help the topping regain some crispness.
