- Heat the oven to 425°F and line a large baking sheet with parchment paper if desired.
- Cut the broccoli into evenly sized bite-size florets. Peel and slice the tender portions of the stems, discarding only the tough outer sections.
- Toss the dry broccoli with olive oil, minced garlic, kosher salt, and black pepper until every piece is lightly coated.
- Arrange the broccoli in one layer on the baking sheet, placing many florets cut-side down and leaving space between pieces.
- Roast for 16 to 22 minutes, turning once if needed, until the edges are browned and crisp and the stems are fork-tender.
- Sprinkle the Parmesan over the broccoli during the last 2 to 3 minutes of roasting, or add it immediately after the pan comes out of the oven.
- Finish with fresh lemon juice, optional lemon zest, optional red pepper flakes, and additional Parmesan. Serve hot.
Notes
Dry the broccoli thoroughly and avoid overcrowding the baking sheet so it roasts instead of steams. Use two baking sheets if necessary. Store leftovers in the refrigerator and reheat in a hot oven or air fryer for the best texture.
