  • 2 lb Beef round steak or cube steak, cut into 4–6 serving pieces
  • 1 10.5 oz can Condensed cream of mushroom soup
  • 1 packet, about 0.87–1 oz Dry brown-gravy mix
  • 1 packet, about 1 oz Dry onion-soup mix
  • 1 cup Water or low-sodium beef broth
  • 1 medium Medium onion, sliced
Seasoning
  • 1/2 teaspoon Black pepper
  • As needed Salt

Method
 

Step-by-Step
  1. Heat the oven to 325°F. Lightly grease a 9-by-13-inch baking dish and arrange the steak pieces in a single layer as much as possible.
  2. Season the steaks lightly with the black pepper. Hold back on salt because the condensed soup, gravy mix, and onion-soup mix already contain plenty of seasoning.
  3. Whisk together the cream of mushroom soup, dry brown-gravy mix, dry onion-soup mix, and water or low-sodium beef broth until mostly smooth.
  4. Pour the gravy mixture over the steaks and scatter the sliced onion over the top. Cover the baking dish tightly with foil or use a lid.
  5. Bake covered for 1 1/2 hours. Check the thickest pieces for tenderness, adding time as needed; tougher or thicker steaks may need up to 2 hours.
  6. Let the steak rest for 5–10 minutes before serving. Taste the gravy and add salt only if it truly needs it, then spoon the gravy over mashed potatoes, rice, or egg noodles.

Notes

Keep the pan covered for nearly the entire cooking period because trapped steam helps round or cube steak become tender. For extra flavor, dredge the steaks in 1/2 cup all-purpose flour seasoned with salt and pepper, then brown them briefly in 2–3 tablespoons vegetable oil before baking; this optional step is not necessary for the simplified method.
