- Place the orange gelatin powder in a large mixing bowl. Pour in the boiling water and stir until every granule has dissolved.
- Stir in the cold water, then refrigerate the mixture for approximately 15 to 20 minutes, or until it has cooled but has not fully set.
- Whisk the instant vanilla pudding mix into the cooled gelatin until smooth and slightly thickened.
- Gently fold in the thawed whipped topping, using broad strokes so the mixture stays light and fluffy.
- Fold in the thoroughly drained mandarin oranges and miniature marshmallows, taking care not to break up the fruit.
- Cover and refrigerate for at least 1 hour before serving. For an especially pleasant texture, chill it for several hours or overnight, then stir gently if needed before serving.
Notes
Drain the mandarin oranges very well because extra syrup or water can make the fluff loose. Always cool the gelatin mixture before adding whipped topping so the topping does not melt. Add optional garnishes, such as extra orange segments or whipped cream, just before serving.
