One-Pot Spaghetti and Meatballs

Tender homemade beef meatballs simmer with spaghetti in a richly seasoned crushed-tomato sauce for a comforting dinner made in one pot. Finish each serving with fresh herbs and plenty of grated Parmesan.

Ingredients
  

Meatballs
  • 1 pound Ground beef, preferably 80–85% lean
  • 1/2 cup Plain breadcrumbs
  • 1/4 cup Finely grated Parmesan cheese
  • 1 Large egg
  • 2 Garlic cloves, minced
  • 1 tablespoon Fresh parsley, chopped
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
Sauce and Pasta
  • 1 tablespoon Olive oil
  • 1 Medium yellow onion, finely chopped
  • 2 Garlic cloves, minced
  • 28 ounces Crushed tomatoes
  • 3 cups Water or low-sodium chicken or beef broth
  • 12 ounces Dried spaghetti
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Dried Italian seasoning or dried oregano, optional
For Serving
  • As needed Fresh basil or parsley
  • As needed Additional grated Parmesan

Method
 

Step-by-Step
  1. Combine the ground beef, breadcrumbs, Parmesan, egg, minced garlic, parsley, kosher salt, and black pepper in a bowl. Mix gently just until the ingredients come together, then shape the mixture into approximately 18–20 small meatballs about 1 1/2 inches wide.
  2. Heat the olive oil in a large Dutch oven or deep, wide skillet over medium-high heat. Brown the meatballs in a single layer for about 5–7 minutes, turning occasionally; transfer them briefly to a plate if the pan is crowded, and remember they do not need to be fully cooked yet.
  3. Add the chopped onion to the same pot and cook for 3–4 minutes, until softened. Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
  4. Pour in the crushed tomatoes and water or broth, then stir in the kosher salt and optional Italian seasoning or oregano. Return the meatballs to the pot and add the spaghetti, pressing the strands gently into the liquid as they soften.
  5. Bring the pot to a simmer, cover it partially, and cook for 15–18 minutes. Stir and separate the spaghetti every few minutes so it does not stick, and continue cooking until the pasta is tender and the meatballs reach an internal temperature of 160°F (71°C).
  6. Taste the sauce and adjust the seasoning as needed. Let the finished pasta stand for 3–5 minutes so the sauce can thicken, then garnish with fresh basil or parsley and additional grated Parmesan.

Notes

Mix the meatball ingredients gently so they stay tender. Use a wide pot or deep skillet and stir frequently after adding the spaghetti. If the sauce becomes too thick before the pasta is tender, add hot water 1/4 cup at a time. Leftovers can be refrigerated and gently reheated with a splash of water.
