  • 4 Plain English muffins, split in half
  • 1 cup Pizza sauce or marinara sauce
  • 1 1/2 cups, about 6 ounces Shredded low-moisture mozzarella cheese
  • 24 slices, about 2 ounces Small pepperoni slices
  • 2 tablespoons Grated Parmesan cheese
Seasoning
  • 1/2 teaspoon Dried oregano or Italian seasoning
Optional Ingredients
  • 1/4 teaspoon Garlic powder
  • 1 teaspoon Olive oil for brushing muffin halves

Step-by-Step
  1. Heat the oven or toaster oven to 425°F. Arrange the split English muffin halves cut-side up on a baking sheet, and toast for 2–3 minutes first if they are very soft.
  2. Spread about 2 tablespoons of pizza sauce over each muffin half, keeping the layer thin. Sprinkle with mozzarella, add the pepperoni, and finish with Parmesan and oregano or Italian seasoning.
  3. Bake for 7–10 minutes, until the cheese is melted and bubbling and the muffin edges are crisp. Broil for 1–2 minutes if you want a more browned, old-fashioned finish, watching closely.

Notes

Toasting before topping is the most reliable way to keep the bottoms crisp. Keep the sauce layer thin because excess sauce can make the muffins soggy and keep the cheese from browning. Serve hot, and stay near the oven while broiling because the cheese can burn quickly.
