Old Fashioned Tweed Cake with Chocolate Flakes

Cake
  • 1/2 cup (113 g) Unsalted butter, softened
  • 1 cup (200 g) Granulated sugar
  • 2 large eggs Large eggs, separated
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups (190 g) All-purpose flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 1 cup (240 ml) Milk
  • 2 ounces (55-60 g), about 1/2 cup Semisweet chocolate, finely grated
Chocolate Icing
  • 1/4 cup (57 g) Unsalted butter
  • 1/4 cup (60 ml) Milk
  • 1/4 cup (25-30 g) Unsweetened cocoa powder
  • 2 cups (225-250 g) Sifted icing sugar
  • 1 teaspoon Vanilla extract

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 9 x 13-inch baking pan and line the bottom with parchment if desired.
  2. Cream the softened butter and granulated sugar until light and fluffy. Beat in the egg yolks and vanilla.
  3. Whisk together the flour, baking powder, and salt. Add the dry mixture to the butter mixture in portions, alternating with the milk, and mix only until combined.
  4. Beat the egg whites in a clean bowl to firm peaks. Fold them gently into the batter, followed by the finely grated semisweet chocolate.
  5. Spread the batter evenly in the prepared pan. Bake for 30-35 minutes, until the center springs back lightly and a tester comes out clean.
  6. Cool the cake completely. For the icing, melt the butter with the milk, remove from the heat, and whisk in the cocoa, icing sugar, and vanilla until smooth; add a teaspoon or two of milk if needed, then spread over the cake.

Notes

Chill or briefly freeze the chocolate before grating for dry, distinct flakes. Fold gently so the whipped egg whites retain their air. Do not overbake; the cake is best when moist and just set in the center.
