Old-Fashioned Glorified Rice Dessert Salad

A chilled vintage dessert salad made with cooled white rice, pineapple, maraschino cherries, marshmallows, and homemade sweetened whipped cream. It serves about 8 and is especially delicious after an overnight rest in the refrigerator.

  • 3 cups Cooked, cooled white long-grain rice
  • 1 20-ounce can Crushed pineapple, well drained
  • 1 10-ounce jar Maraschino cherries, drained and chopped
  • 1 cup Miniature marshmallows
Whipped Cream
  • 1 cup Heavy whipping cream
  • 1/2 cup Granulated sugar
  • 1 teaspoon Vanilla extract
Optional Additions
  • 1 10- to 11-ounce can Mandarin oranges, drained
  • 1/2 cup Sweetened shredded coconut
  • 1/2 cup Sour cream

Method
 

Step-by-Step
  1. Cook the long-grain white rice according to package directions. Spread the cooked rice in a shallow dish and cool it completely for 30 to 60 minutes before combining it with any other ingredients.
  2. Drain the crushed pineapple exceptionally well, pressing away excess juice if needed. Drain and chop the maraschino cherries, then pat them dry with paper towels if they are very wet.
  3. Whip the heavy cream with the granulated sugar and vanilla extract until soft-to-medium peaks form. The cream should hold its shape but remain smooth and easy to fold.
  4. Place the completely cooled rice, drained pineapple, chopped cherries, and miniature marshmallows in a large mixing bowl. Fold in the whipped cream gently until the ingredients are evenly coated.
  5. Fold in the drained mandarin oranges or shredded coconut if using. Cover the bowl and refrigerate the salad for at least 2 hours, or leave it overnight for the best flavor and texture.
  6. Spoon the chilled glorified rice into a serving bowl and garnish with a few reserved cherries or mandarin orange segments. Serve cold and keep leftovers refrigerated.

Notes

Drain the pineapple and cherries very well to prevent a watery salad, and always cool the rice completely before mixing. For a shortcut, use one 8-ounce container of thawed frozen whipped topping and omit the heavy cream, sugar, and vanilla.
