- Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
- Beat the softened butter, granulated sugar, and packed light brown sugar on medium speed for about 2 minutes, until creamy.
- Add the eggs, vanilla extract, and lemon juice. Mix on low speed for about 30 seconds, then on medium speed for approximately 2 minutes, until light and fluffy.
- In a separate bowl, combine the all-purpose flour, rolled oats, baking soda, salt, and cinnamon.
- Add the dry ingredients to the butter mixture and mix on low speed for about 45 seconds, just until combined. Do not continue mixing once the flour disappears.
- Add the semi-sweet chocolate chips and chopped walnuts. Mix briefly for about 30 seconds, just until the pieces are evenly distributed.
- Portion approximately 3 tablespoons of dough per cookie and place the portions about 2 inches apart on the prepared baking sheets.
- Bake for 20 to 23 minutes, until the edges are golden brown while the centers still look soft.

Notes
