Cookie Dough
  • 1/2 pound Butter, softened
  • 3/4 cup plus 1 tablespoon Granulated sugar
  • 3/4 cup Packed light brown sugar
  • 2 Large eggs
  • 1 1/4 teaspoons Vanilla extract
  • 1/4 cup Freshly squeezed lemon juice
Dry Ingredients
  • 2 1/3 cups All-purpose flour
  • 1/4 cup Rolled oats
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 pinch Ground cinnamon
Mix-Ins
  • 2 2/3 cups Semi-sweet chocolate chips
  • 1 3/4 cups Chopped walnuts

Method
 

Step-by-Step
  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Beat the softened butter, granulated sugar, and packed light brown sugar on medium speed for about 2 minutes, until creamy.
  3. Add the eggs, vanilla extract, and lemon juice. Mix on low speed for about 30 seconds, then on medium speed for approximately 2 minutes, until light and fluffy.
  4. In a separate bowl, combine the all-purpose flour, rolled oats, baking soda, salt, and cinnamon.
  5. Add the dry ingredients to the butter mixture and mix on low speed for about 45 seconds, just until combined. Do not continue mixing once the flour disappears.
  6. Add the semi-sweet chocolate chips and chopped walnuts. Mix briefly for about 30 seconds, just until the pieces are evenly distributed.
  7. Portion approximately 3 tablespoons of dough per cookie and place the portions about 2 inches apart on the prepared baking sheets.
  8. Bake for 20 to 23 minutes, until the edges are golden brown while the centers still look soft.
  9. Leave the cookies on the baking sheet to cool for about 1 hour before transferring them to a serving plate or storage container.

Notes

Use a 3-tablespoon cookie scoop for even portions. The centers should look slightly underbaked when removed from the oven because they continue setting as they cool. Rotate baking sheets if your oven has uneven heat. The recipe includes lemon juice as part of its signature flavor and texture.
